Authentic Mexican Coastal Cuisine
Delicious meals are prepared daily using only fresh ingredients and our tortillas are hand made daily. We offer a variety of dishes ranging from locally caught seafood to vegetarian dishes. Meals are well balanced and you can eat as much as you like.
Our meals are a constant source of positive compliments by the majority of our guests. At the same time, we recognize that it’s hard to please each and every guest when it comes to food, yet we strive to do everything we can to meet guests dietary needs no matter how uncommon the diet.
Our central dining palapa hosts a sit down dining area, stocked bar, and lighting to round off the atmosphere. If you are on a diet…good luck! If you require a special diet and cannot eat certain items or require a vegetarian diet, just let us know and we will meet your needs the best we can. We cook for a large group of 24 to 30 guests each night, but if we know in advance, we’ll prepare something special for you if your diet does not allow you to eat our normal meals. With the close of each week we host a send off fiesta with local live music or entertainment.
A Typical Range of Meals
Pre-Breakfast – 6:00 am to 6:30 am:The central dining palapa is open usually by 6:00 am and is ready to go with hot coffee, hot water and a variety of tea bags, instant oatmeal and yogurt daily prior to our big breakfast.
Breakfast – 8:00 am:
Each morning a big breakfast is served. We serve a variety of dishes ranging from:
- Mexican style eggs
- Juevos rancheros (eggs in ranch sauce)
- Chilaquiles (fried corn tortillas mixed with cheese, beans and eggs)
- Hot oatmeal
- Hot cakes
Rice, beans and tortillas are typically available with each meal.
Lunch – 12:00 pm:
Lunch is served at noon along with coffee, and hot water for tea are always available. Also, a variety of sodas and cervezas (beer) are always available (at no charge) in the coolers. A few of the lunch dishes that we serve are as follows:
- Quesadillas and lentil bean soup (cheese filled with tortillas)
- Fish tacos (our guests favorite)
- Chile rellenos (stuffed chilies)
- Albondigas (fresh fish or beef stew)
- Vegetable soups
- Calabacitas with rice (Squash dish with rice)
- A variety of vegetable and fish soups
Rice, beans and tortillas are typically available with each meal.
Happy hour – 5:00 pm:
Happy hour consists of margaritas and beer along with fresh guacamole, salsa and corn chips. A great time to enjoy the sunset from the dining palapa with the barn doors open and a full view of the lagoon and sun setting.
Dinner – 6:00 pm:
Dinner is served and the sun has set. Menu items are varied and include items below:
- Burritos (beef and chicken)
- Cayo de Hacha (Scallops)
- Variety of seafood
- Fresh vegetables
- Carne asada (beef dishes)
- Chicken mole (a favorite-chicken in sauce)
- Enchiladas
- Fresh fish
Rice, beans and tortillas are typically available with each meal.
Dinners usually have a either a salad or fresh vegetable dish served on the side.
Vegetarians
With prior notice we can prepare vegetarian meals. There has been a growing demand for more vegetarian food at camp and we have made preparations to accommodate the needs of our vegetarian guests and now supply a wide range of vegetarian dishes with prior notice.
